To OP -
First up the Auto-pilot/AI settings are pants and are pretty much working as intended, they are lazy-boy settings. If they worked perfectly you'd see 100xs more afk isk farmers running macros to farm cash. They are only intended for zero risk situations and to be honest i never use them even then.
One good trick on any mission that isnt warp gated at the beginning (EG you warp straight to the location NOT a gate) is to initiate warp then cancel it almost instantly, the game now will allow you to warp in at whatever distance you desire.
To the main problem you have though i fail to see how pressing arrow keys is any more accurate or easy than double clicking the exact point you wish to move toward? Collidable debris are easy to navigate around as long as you are aware of your surroundings. Assume all objects have a field around them and avoid not just the object but the invisible field and you should never have a problem. If you set a warp and you hit something instantly (and i mean instantly not after 10 secs) cancel said warp spin your camera around and manually boost directly away from the object then rewarp.
With all missions you want to dictate range and position, dont get dragged in by rats. Once they start targetting you they are 100% predictable and will always close to their optimal range, use this to your advantage, if they are amongst huge debri fields let them target you and burn off away from the objects to pull them out then engage them.
And as others have said later missions (level 3 and up) have warp scrambling rats and towers so this tactic will be pretty much invalid at that point. If you are warping out every 2 kills, improve your fitting skills and get a better ship, also read up on evesurvival about the mission and only do what is required (often times you only need take out a specific structure or NPC) fit for tanking the rats you will face and likewise pack ammo which hits them hardest.
Bottom line is this, name a game MMO or otherwise which doesnt have AI problems or control quirks which you must adjust to? No one is suggesting EVE is without its problems but they are no greater or lesser than any other MMO out there. If they made object non collideable there'd be 100 whine threads complaining they ruined the game (and id agree - flying through object would suck and you may as well just remove them all if it were the case) just be thannkful they dont have collision damage, then your complaint might be more valid.
